Ingredients
12 fully cooked breakfast sausage links
12 slices soft white or brioche bread
3 large eggs
1/4 cup whole milk
1 teaspoon cinnamon
1 teaspoon vanilla extract
2 tablespoons butter (for frying)
1/2 cup maple syrup (for dipping)
Instructions
1. Trim the crusts off each bread slice and flatten with a rolling pin.
2. Place a sausage link on the edge of each slice and roll tightly. Set aside seam-side down.
3. In a shallow bowl, whisk eggs, milk, cinnamon, and vanilla extract.
4. Dip each roll-up in the egg mixture, coating all sides.
5. Heat a skillet over medium heat and melt butter.
6. Cook roll-ups seam-side down first, turning to brown all sides until golden.

Notes
Use soft bread like brioche or sandwich bread so it rolls easily without cracking.
