1 pound large shrimp, peeled and deveined with tails on

1 cup cornstarch

1 teaspoon salt

1 teaspoon cracked black pepper

1 teaspoon red chili flakes

6 cloves garlic, thinly sliced

2 green onions, chopped

Oil for frying (about 2 cups vegetable or canola oil)


Instructions

1. Pat shrimp completely dry using paper towels to remove all moisture.

2. Place cornstarch in a bowl and toss shrimp until evenly coated. Shake off excess.

3. Heat oil in a deep skillet or wok over medium-high heat.

Notes

For ultra crispiness, make sure your shrimp are thoroughly dry before coating with cornstarch.
