Description
This fast-track version of classic Vietnamese pho uses rotisserie chicken for ease without losing its deep, comforting flavors. The fragrant broth, silky noodles, and fresh toppings make it a soul-warming meal any night of the week.
Ingredients
2 cups shredded rotisserie chicken
8 ounces flat rice noodles
1 large onion, halved
3 inches fresh ginger, halved
1 cinnamon stick
3 star anise pods
4 whole cloves
8 cups chicken broth
2 tablespoons fish sauce
1 tablespoon brown sugar
1 cup fresh cilantro leaves
1 cup fresh Thai basil leaves
1 bunch green onions, sliced
1 jalapeño, thinly sliced (optional)
2 limes, cut into wedges
Instructions
1. Char the onion and ginger in a dry skillet over medium-high heat, cut-side down, for 2–3 minutes until browned.
2. Toast the cinnamon stick, star anise, and cloves in the same skillet for 1 minute until fragrant.
3. In a large pot, combine chicken broth, charred onion and ginger, toasted spices, fish sauce, and brown sugar. Simmer uncovered for 25–30 minutes.
4. Cook rice noodles according to package directions. Drain and set aside.
5. Shred rotisserie chicken into bite-sized pieces.
6. To serve, place noodles in bowls, top with shredded chicken, and ladle in hot broth.
7. Garnish with cilantro, basil, green onions, jalapeños, and fresh lime wedges.
Notes
Char the onion and ginger to mimic the smoky depth of traditional pho broth.
Use high-quality chicken broth or homemade for the richest flavor.
Keep noodles separate until serving to prevent them from soaking up too much broth.
