Description
This roasted asparagus with garlic chili crunch is a bold, flavorful side dish that takes only 20 minutes to make. Tender roasted stalks are topped with golden crispy garlic and a hint of chili for just the right amount of heat. Whether you’re pairing it with meats, pasta, or grain bowls, it’s an easy way to add color and punch to any plate.
Ingredients
1 bunch asparagus (about 1 lb), ends trimmed
2 tablespoons olive oil, divided
3 cloves garlic, thinly sliced
1 teaspoon red chili flakes (adjust to taste)
1/2 teaspoon salt
1 teaspoon lemon zest or juice (optional)
Instructions
1. Preheat your oven to 425°F (220°C).
2. Trim the woody ends from the asparagus, rinse, and pat completely dry.
3. Place asparagus on a parchment-lined baking sheet.
4. Drizzle with 1 tablespoon olive oil, sprinkle with salt, and toss gently.
5. Spread the spears in a single layer and roast for 12–15 minutes until tender with blistered tips.
6. While the asparagus roasts, heat the remaining 1 tablespoon olive oil in a skillet over medium heat.
7. Add sliced garlic and stir constantly until golden brown and crisp.
8. Quickly stir in chili flakes for 10 seconds, then remove from heat.
9. Transfer roasted asparagus to a serving plate.
10. Spoon the garlic chili crunch over the top.
11. Add optional lemon zest or a squeeze of juice, and serve immediately.
Notes
Use medium or thick asparagus for best texture during roasting.
Don’t skip drying the asparagus before roasting—moisture leads to steaming, not crisping.
Make the garlic chili crunch while the asparagus is in the oven to save time.
