Ingredients

1 3/4 cups all-purpose flour

2 tbsp unsweetened cocoa powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/3 cup brown sugar

1 egg

1 tsp vanilla extract

1 tbsp red food coloring (adjust to preference)

For the Frosting:

4 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 cup powdered sugar

Pinch of salt


Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream butter with both sugars until light and fluffy.
  4. Beat in egg, vanilla extract, and red food coloring.
  5. Gradually mix in dry ingredients until just combined. Do not overmix.
  6. Chill dough for 30 to 45 minutes.
  7. Scoop dough into 1.5 tbsp balls and place on prepared sheets.
  8. Bake 10–12 minutes, until edges are set and centers soft. Cool on sheet, then transfer to rack.
  9. Make frosting: Beat cream cheese and butter until smooth. Add powdered sugar and salt. Beat until fluffy.
  10. Frost cooled cookies with a swirl or dollop. Serve or store as directed.
