Description

Rattlesnake Pasta is a bold and creamy dish featuring Cajun-spiced chicken, gemelli pasta, and a rich, cheesy cream sauce. This easy weeknight favorite comes together in about 30 minutes and satisfies both your comfort food cravings and your spicy kick desires.


Ingredients

2 boneless skinless chicken breasts, sliced

2 cups gemelli pasta (or penne/rotini)

1 cup heavy cream

1 tablespoon Cajun seasoning (plus extra for garnish)

1 tablespoon olive oil

2 tablespoons butter

3 cloves garlic, minced

1/2 yellow onion, finely chopped

1 red bell pepper, sliced

1/4 cup grated Parmesan cheese

1/2 cup shredded Monterey Jack or mozzarella (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Cook gemelli pasta until al dente. Drain and set aside.
  2. Season Chicken: Toss chicken strips with Cajun seasoning, salt, and pepper.
  3. Cook Chicken: In a large skillet, heat olive oil over medium heat. Cook chicken until browned and fully cooked. Remove and set aside.
  4. Sauté Veggies: In the same skillet, melt butter. Add garlic and onion, cook until fragrant. Stir in bell pepper and sauté until soft.
  5. Make Sauce: Pour in heavy cream and bring to a simmer. Stir in Parmesan and Monterey Jack until melted and smooth. Season with additional Cajun seasoning if desired.
  6. Combine: Add cooked pasta and chicken to the skillet. Toss until evenly coated.
  7. Serve: Garnish with chopped parsley and a sprinkle of Parmesan. Serve hot.
