Ingredients
1 can chickpeas, drained and patted dry
1 cup fresh parsley
3 cloves garlic
1/4 cup onion
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1/2 cup Greek yogurt or tahini sauce for serving
Instructions
1. Add the chickpeas, parsley, garlic, onion, lemon juice, cumin, paprika, salt, and black pepper to a food processor. Pulse until the mixture is finely chopped and holds together slightly.
2. Transfer the mixture to a bowl and stir in the flour until evenly combined.
3. Shape the mixture into 6 to 8 small patties.
4. Heat the olive oil in a skillet over medium heat.
5. Cook the falafel patties for 3 to 4 minutes per side, until golden brown and crisp.
6. Serve warm with Greek yogurt or tahini sauce.
Notes
Use very dry chickpeas so the mixture is not too wet.
Do not over-process the mixture or the texture can become pasty.
Reheat leftovers in a skillet or air fryer for the best crisp texture.
