Ingredients

1 lb ground beef

2 cups cooked brown rice

2 cups chopped romaine lettuce

1 cup canned black beans, drained and rinsed

1 cup shredded cheddar cheese

1 large avocado, diced

1 cup pico de gallo

1/2 cup sour cream (or Greek yogurt)

1/4 cup chopped fresh cilantro

1 packet taco seasoning (or 2 tbsp homemade blend)

Optional: lime wedges, tortilla strips, hot sauce


Instructions

1. In a skillet over medium-high heat, brown the ground beef until no longer pink. Drain excess fat.

2. Stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.

3. While beef cooks, heat or prepare your brown rice. Chop romaine lettuce and dice the avocado.

4. Warm black beans in a saucepan or microwave, optionally season with salt and cumin.

5. Start bowl assembly: layer rice and lettuce at the base.

6. Add ground beef and black beans.

7. Top with cheese, pico de gallo, avocado, sour cream, and cilantro.

8. Add lime juice, tortilla strips, or hot sauce if desired.


Notes

For faster prep, use pre-cooked or microwaveable brown rice.

Slice avocado right before serving to prevent browning.

Swap ground beef with ground turkey or plant-based crumbles for variation.
