This vibrant and festive Pomegranate Christmas Salad features a colorful mix of spring greens, creamy avocado, tangy blue cheese, crunchy candied pecans, and juicy pomegranate arils. Finished with a sweet balsamic vinaigrette, it’s the perfect refreshing side dish for any holiday gathering.
Ingredients
6 cups spring greens or arugula mix
1 large pomegranate, arils removed
2 ripe avocados, sliced
1 cup candied pecans
1/2 cup blue cheese crumbles
3 tablespoons balsamic vinegar
1/2 teaspoon Dijon mustard
1 teaspoon maple syrup
1/4 cup olive oil
salt and pepper to taste
Instructions
1. Rinse the spring greens and arugula gently under cold water and dry thoroughly. Arrange in a large bowl or platter.
2. Slice the avocados into thin wedges and layer them over the greens.
3. Scatter the pomegranate arils over the salad.
4. Sprinkle the candied pecans evenly on top.
5. Add blue cheese crumbles throughout the salad.
6. In a bowl, whisk together balsamic vinegar, Dijon mustard, maple syrup, and olive oil until emulsified. Season with salt and pepper.
7. Drizzle vinaigrette over the salad just before serving. Toss lightly if desired or serve as-is.
Notes
To keep avocado slices fresh, wait to cut and add them just before serving.
You can prepare all ingredients in advance and store separately; assemble right before serving for the best texture.
For a milder cheese option, substitute blue cheese with feta or goat cheese.
