2 large russet potatoes
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp dried basil
Salt and black pepper to taste
1/2 cup shredded Parmesan cheese
1/2 cup mini pepperoni slices
Instructions
- Preheat oven to 400°F (200°C) or air fryer to 375°F.
- Scrub and thinly slice potatoes (about 1/8 inch thick). Pat dry with paper towels.
- Toss slices with olive oil, garlic powder, oregano, basil, salt, and pepper.
- Arrange slices in a single layer on a parchment-lined baking sheet.
- Bake for 15-20 minutes, flipping halfway; or air fry for 10-12 minutes, shaking once.
- Remove and sprinkle Parmesan and place a mini pepperoni on each chip.
- Return to oven or air fryer for 3-5 more minutes until cheese is melted.
- Let cool slightly, garnish with extra herbs, and serve warm.
