These Pineapple Chicken Kabobs bring together juicy marinated chicken and sweet pineapple chunks grilled to caramelized perfection. Perfect for summer grilling, quick weeknight dinners, or festive backyard parties, this recipe is as versatile as it is flavorful.
Ingredients
1.5 lbs boneless chicken breast or thighs
2 cups fresh pineapple chunks
1/4 cup soy sauce
2 tablespoons honey
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon sesame oil
1 tablespoon rice vinegar or lime juice
Wooden or metal skewers
Instructions
1. In a bowl, whisk together soy sauce, honey, garlic, ginger, sesame oil, and vinegar or lime juice. Set aside a few tablespoons for basting.
2. Cut chicken into 1.5-inch chunks and place in a zip-top bag or bowl. Add marinade and refrigerate for 30 minutes to 4 hours.
3. Thread chicken and pineapple alternately onto skewers.
4. Preheat grill or grill pan to medium-high heat. Oil the surface.
5. Grill kabobs 4–5 minutes per side, brushing with reserved marinade, until chicken is cooked and lightly charred.
6. Rest briefly before serving. Garnish with chopped cilantro or green onions if desired.
Notes
Soak wooden skewers in water for 30 minutes to prevent burning.
Don’t skip marinating—30 minutes minimum is essential for flavor and tenderness.
Fresh pineapple gives the best grill caramelization; avoid canned in syrup.
