Description
These Perfected Cowboy Mushrooms are sautéed in rich browned butter, spiced with paprika and garlic, and finished with Worcestershire and fresh herbs for a bold, rustic side dish. Perfect with steak, mashed potatoes, or even toast.
Ingredients
16 oz mushrooms (button or cremini)
3 tablespoons butter
3 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon dried thyme or oregano
1⁄4 teaspoon red pepper flakes (optional)
1⁄4 cup water or broth (for deglazing)
salt and pepper to taste
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
1. Clean the mushrooms using a damp paper towel or brush. Trim stems as needed and leave whole.
2. Heat a cast-iron skillet over medium-high heat. Add 2 tablespoons of butter and let it brown slightly.
3. Add the mushrooms and sear undisturbed for 3–4 minutes until golden. Stir occasionally.
4. Add garlic and stir until fragrant (about 30 seconds).
5. Add Worcestershire sauce, paprika, dried herbs, and optional red pepper flakes. Stir to coat.
6. Lower heat to medium, add remaining 1 tablespoon butter and water or broth. Deglaze and scrape up browned bits.
7. Simmer for 5–7 minutes until tender and sauce thickens.
8. Season with salt and pepper to taste.
9. Remove from heat and garnish with fresh parsley. Serve hot.
Notes
Avoid soaking mushrooms—use a damp towel to clean so they don’t get soggy.
Let them sear without stirring too much for a proper golden crust.
A splash of broth adds flavor and helps deglaze for a richer sauce.
