1 ½ cups graham cracker crumbs

6 tablespoons melted butter

2 tablespoons brown sugar

24 ounces cream cheese, softened

¾ cup granulated sugar

3 large eggs

2 teaspoons vanilla extract

¼ cup sour cream or heavy cream

3 cups sliced peaches (fresh or canned)

¼ cup brown sugar

1 tablespoon cornstarch or flour

½ teaspoon cinnamon

⅛ teaspoon nutmeg

½ cup all-purpose flour

¼ cup brown sugar

¼ teaspoon cinnamon

3 tablespoons cold butter


Instructions

1. Preheat oven to 350°F (175°C). Line the bottom of a springform pan with parchment paper.

2. Combine graham cracker crumbs, melted butter, and brown sugar. Press into the pan and bake for 10 minutes. Let cool.

3. In a large bowl, beat cream cheese until smooth. Add sugar, eggs, vanilla, and sour cream. Mix until fully combined and creamy.

4. Pour the cheesecake filling over the baked crust. Bake at 325°F (163°C) for 45–50 minutes until edges are set but center jiggles slightly. Cool completely, then chill in the fridge for at least 4 hours or overnight.

5. In a saucepan, add peaches, brown sugar, cinnamon, nutmeg, and cornstarch slurry. Cook over medium heat until thickened. Let cool completely.

6. In a separate bowl, mix flour, brown sugar, and cinnamon. Cut in butter until crumbly. Bake at 350°F for 10 minutes or until golden.

7. Once cheesecake is fully chilled, spoon the peach topping over the surface. Sprinkle crumb topping on top. Press gently so it sticks.

8. Slice with a warm knife and serve cold with whipped cream or vanilla ice cream if desired.


Notes

For ultra-smooth cheesecake, use room-temperature cream cheese and avoid overmixing to prevent cracks.

If using canned peaches, drain and pat dry thoroughly to avoid a watery topping.
