Ingredients
1.5 pounds boneless skinless chicken breast or thighs
1.5 pounds baby red or Yukon gold potatoes
3 tablespoons olive oil
4 cloves garlic minced
1.5 tablespoons Cajun seasoning
1 teaspoon paprika
1 teaspoon salt
0.5 teaspoon black pepper
0.5 cup grated parmesan cheese
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment or foil.
2. Wash and dry the potatoes, then chop into evenly sized chunks. Cut chicken into bite-sized pieces.
3. In a large bowl, combine chicken and potatoes. Add olive oil, garlic, Cajun seasoning, paprika, salt, and pepper. Toss to coat evenly.
4. Spread mixture evenly on the baking sheet without overcrowding.
5. Roast for 25–30 minutes, flipping halfway through, until potatoes are golden and chicken is fully cooked (internal temp 165°F).
6. Sprinkle hot chicken and potatoes with parmesan cheese and chopped parsley. Serve warm.
Notes
Cut the potatoes and chicken into similar-sized pieces for even roasting.
Don’t skip flipping halfway through roasting for a perfect golden crust.
Add more parmesan at serving time if you love extra cheesy flavor.
