Ingredients

12 oz (340 g) linguine or spaghetti

1 lb (450 g) chicken breast or thighs, sliced into strips

1 tbsp vegetable or sesame oil

1 red bell pepper, sliced

1 orange bell pepper, sliced

3 cloves garlic, minced

2 scallions, chopped (separate white and green parts)

1-inch piece fresh ginger, grated

¼ cup soy sauce (low sodium)

2 tbsp honey or brown sugar

1 tbsp rice vinegar or lime juice

1 tbsp sriracha or chili garlic sauce (adjust to taste)

1 tsp cornstarch mixed with 1 tbsp water (optional)

Salt & pepper to taste

Fresh cilantro or basil, for garnish (optional)


Instructions

  1. Cook the Pasta
    Bring salted water to a boil in a large skillet. Add pasta and cook until al dente (8–9 minutes). Drain and set aside.
  2. Sear the Chicken
    Heat oil in the skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until browned and cooked through (5–6 minutes). Remove from skillet and set aside.
  3. Sauté Aromatics
    In the same skillet, add scallion whites, garlic, and ginger. Sauté for about 1 minute until fragrant.
  4. Cook Vegetables
    Add bell peppers and cook for 3–4 minutes until slightly softened.
  5. Make the Sauce
    Stir in soy sauce, honey or sugar, vinegar or lime juice, and sriracha. Simmer for 1–2 minutes. Add cornstarch slurry if using, and stir to thicken.
  6. Combine Everything
    Return chicken and cooked pasta to the skillet. Toss well until evenly coated and heated through.
  7. Garnish and Serve
    Sprinkle scallion greens and garnish with cilantro or basil if desired. Serve hot.
