Ingredients
4 chicken thighs or breasts
1 cup long-grain or basmati rice
1 lemon (juice and zest)
2 cups chicken broth
3 cloves garlic, minced
1 small onion, chopped
1 teaspoon dried thyme or rosemary (or 1 tablespoon fresh)
2 tablespoons butter or olive oil
Salt and pepper, to taste
Instructions
1. Pat chicken dry and season with salt, pepper, and herbs.
2. Heat butter or oil in a pot over medium heat. Sear chicken 3-4 minutes per side until golden. Remove and set aside.
3. In the same pot, sauté onion 2-3 minutes until soft. Add garlic, cook 1 minute.
4. Stir in rice, toast lightly. Add chicken broth, lemon juice, and zest. Scrape browned bits from bottom.
5. Nestle chicken back into pot. Cover, reduce heat, and simmer 20-25 minutes until rice is tender and chicken is cooked.
6. Let sit off heat 5 minutes, fluff rice, garnish with herbs, and extra lemon.
Notes
Let the chicken rest at room temp for 10 minutes before cooking for even searing.
Use fresh lemon for the best brightness — bottled juice won’t give the same flavor.
Check rice at 20 minutes; some pots cook faster, and you don’t want mushy rice.
