Description

This One Pot Lasagna Soup brings together all the comforting flavors of classic lasagna in a hearty, cozy soup—without the layering! Made in a single pot with ground beef, sausage, crushed tomatoes, and tender lasagna noodles, it’s finished with cheesy ricotta, mozzarella, and a fresh basil or pesto topping. Perfect for weeknight dinners or weekend meals when you want something warm, filling, and absolutely satisfying.

1/2 pound ground beef

1/2 pound Italian sausage

1 medium yellow onion, chopped

4 cloves garlic, minced

2 tablespoons tomato paste

1 can (28 ounces) crushed tomatoes

4 cups beef broth

2 teaspoons Italian seasoning

1/2 teaspoon red pepper flakes (optional)

8 lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Fresh basil or 2 tablespoons pesto, for garnish


Instructions

1. In a large Dutch oven, cook ground beef and sausage over medium heat until browned. Drain excess grease.

2. Add chopped onion to the pot and sauté for 3–4 minutes until translucent. Add minced garlic and cook for another 30 seconds.

3. Stir in tomato paste and cook for 1–2 minutes. Add crushed tomatoes and beef broth; mix well.

4. Season with Italian seasoning and red pepper flakes. Bring to a gentle boil.

5. Break lasagna noodles into bite-sized pieces and add to the pot. Simmer uncovered for 10–12 minutes, stirring occasionally, until noodles are tender.

6. Ladle soup into bowls. Top each with a dollop of ricotta, a sprinkle of mozzarella and Parmesan, and garnish with fresh basil or pesto. Serve warm.


Notes

Let the soup sit for a few minutes before serving—this allows the noodles to soak up flavor without over-softening.

Don’t skip the tomato paste—it intensifies that rich lasagna flavor base.

For a creamier texture, stir in a spoonful of ricotta directly into the soup before serving.
