Ingredients
2 tablespoons olive oil
1 lb (450 g) chicken breast, cut into bite-sized pieces
Salt and pepper to taste
2 teaspoons garlic powder (or 2 garlic cloves, minced)
1/2 teaspoon smoked paprika
2 cups rotini pasta (or any short pasta)
1 1/2 cups chicken broth
3/4 cup BBQ sauce (your favorite brand)
2 tablespoons honey
1 tablespoon soy sauce
Optional: chopped parsley or green onions for garnish
Instructions
- Heat olive oil in a large, deep skillet or pot over medium-high heat.
- Add chicken pieces, season with salt, pepper, garlic powder, and smoked paprika.
- Sauté for about 5–6 minutes until golden and cooked through.
- Pour in chicken broth, BBQ sauce, honey, and soy sauce. Stir well.
- Add pasta and stir again. Bring mixture to a boil.
- Reduce heat to a simmer, cover, and cook for 12–15 minutes, stirring occasionally.
- Remove lid and stir. Adjust sauce consistency by simmering uncovered or adding liquid.
- Garnish with parsley or green onions before serving, if desired.
