Ingredients
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts (cut into bite-sized cubes)
12 ounces smoked sausage (sliced into rounds)
2 teaspoons Cajun seasoning (plus more to taste)
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper (optional)
Salt and black pepper to taste
3 cups chicken broth
2 cups heavy cream
1/2 pound elbow macaroni (uncooked)
1 1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium-high heat. Add chicken, season with 1 tsp Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook 3–4 minutes until browned.
- Add sausage slices and cook another 3–4 minutes until browned and fragrant.
- Pour in chicken broth and cream. Stir in uncooked macaroni. Bring to a boil.
- Reduce heat to low, cover, and simmer for 12–15 minutes, stirring occasionally.
- Once pasta is tender, remove from heat. Stir in cheddar and Parmesan until melted and creamy.
- Adjust seasoning to taste with more Cajun or cayenne if desired. Let rest for 2–3 minutes to thicken.
- Serve hot with optional garnish of parsley or extra cheese.
