2 tablespoons olive oil

1 pound boneless, skinless chicken breasts (cut into bite-sized cubes)

12 ounces smoked sausage (sliced into rounds)

2 teaspoons Cajun seasoning (plus more to taste)

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional)

Salt and black pepper to taste

3 cups chicken broth

2 cups heavy cream

1/2 pound elbow macaroni (uncooked)

1 1/2 cups shredded cheddar cheese

1/2 cup grated Parmesan cheese


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken, season with 1 tsp Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook 3–4 minutes until browned.
  2. Add sausage slices and cook another 3–4 minutes until browned and fragrant.
  3. Pour in chicken broth and cream. Stir in uncooked macaroni. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 12–15 minutes, stirring occasionally.
  5. Once pasta is tender, remove from heat. Stir in cheddar and Parmesan until melted and creamy.
  6. Adjust seasoning to taste with more Cajun or cayenne if desired. Let rest for 2–3 minutes to thicken.
  7. Serve hot with optional garnish of parsley or extra cheese.
