Description

This One-Pan Roasted Sausages with Peppers & Potatoes is the ultimate no-fuss dinner that delivers bold flavor and easy cleanup. With golden sausages, tender baby potatoes, sweet bell peppers, and caramelized onions, it’s roasted together in one pan and bursting with comforting, savory goodness.


Ingredients

6 raw sausages (Italian, chicken, bratwurst, or preferred variety)

1.5 pounds baby potatoes

2 bell peppers, sliced (red and yellow recommended)

1 large red onion, sliced into wedges

3 tablespoons olive oil

4 garlic cloves, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme leaves

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon crushed red pepper flakes (optional)


Instructions

1. Preheat your oven to 425°F (220°C).

2. Wash and dry the baby potatoes. Halve any large ones to ensure even roasting.

3. Slice the bell peppers into thick strips and cut the red onion into wedges.

4. In a large mixing bowl, toss potatoes, peppers, and onion with olive oil, garlic, rosemary, thyme, salt, and black pepper (plus red pepper flakes if using).

5. Spread the seasoned vegetables evenly on a large sheet pan.

6. Nestle the raw sausages on top of the vegetables, leaving space between each for browning.

7. Roast for 35–40 minutes, turning sausages and stirring vegetables halfway through.

8. Check that sausages are browned and cooked through (160°F for pork, 165°F for chicken).

9. Remove from oven, garnish with more fresh herbs if desired, and serve hot.


Notes

Don’t overcrowd your pan! Use a large sheet pan to help everything brown, not steam.

You can mix in other veggies like zucchini, mushrooms, or cherry tomatoes—just cut them to similar sizes.

Line your baking tray with parchment paper for extra easy cleanup.
