Ingredients
12 oz (340g) penne pasta
1 lb (450g) smoked or sweet sausage, sliced
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1½ cups heavy cream
½ cup BBQ sauce (sweet & smoky preferred)
1 teaspoon smoked paprika
½ teaspoon black pepper
Salt to taste
1½ cups shredded cheddar cheese
½ cup grated mozzarella (optional)
2 cups chicken broth or water
Fresh parsley or chives for garnish (optional)
Instructions
- Heat olive oil in a large deep skillet over medium-high heat. Add sausage slices and cook until browned and cooked through, about 6–8 minutes. Remove and set aside.
- In the same pan, add chopped onion. Sauté 2–3 minutes until soft. Stir in garlic and cook 30 seconds.
- Pour in broth, cream, BBQ sauce, paprika, pepper, and salt. Stir well. Add penne pasta and ensure it’s submerged.
- Bring to a gentle boil, then reduce heat. Cover and simmer 12–15 minutes, stirring occasionally, until pasta is tender and sauce has thickened.
- Return sausage to the pan. Add cheeses and stir until melted and creamy.
- Let rest for 2 minutes. Garnish with parsley or chives and serve hot.
