Description

This cozy one-pan chicken and potatoes with gravy brings together golden-seared chicken, tender baby potatoes, and a rich, creamy gravy—all in a single skillet. It’s the perfect weeknight dinner that tastes like comfort in every bite.


Ingredients

1.5 lbs boneless skinless chicken thighs or breasts

1.5 lbs baby potatoes, halved

2 tablespoons olive oil

3 tablespoons butter, divided

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried parsley

1.5 cups chicken broth, low sodium

2 tablespoons all-purpose flour

0.5 teaspoon salt (adjust to taste)

0.5 teaspoon black pepper

1 cup shredded cheese (optional, mozzarella or cheddar)


Instructions

1. Heat a large skillet over medium heat and add 1 tablespoon olive oil and 1 tablespoon butter.

2. Season chicken with garlic powder, salt, pepper, and dried thyme.

3. Sear chicken 3–4 minutes per side until golden. Remove and set aside.

4. In the same pan, add another tablespoon of butter and halved potatoes, cut-side down.

5. Let them brown for a few minutes, then stir and cook for 10 minutes until tender. Season with onion powder, salt, and pepper.

6. Push potatoes to one side of skillet. Melt remaining tablespoon of butter in the center.

7. Sprinkle in flour and whisk 1 minute until bubbly and golden.

8. Slowly pour in chicken broth, whisking constantly until smooth and thickened.

9. Return seared chicken to the skillet, nestling between the potatoes.

10. Spoon gravy over chicken. Cover and simmer on low for 10–12 minutes.

11. (Optional) Sprinkle cheese over the top. Cover and let melt before serving.


Notes

Don’t skip searing the chicken—it adds rich flavor and beautiful color.

Use low-sodium broth to avoid overly salty gravy.

For a creamier twist, stir in 1–2 tablespoons of heavy cream right at the end.
