Ingredients
2 cups shredded coconut
1 cup chopped pecans
3/4 cup maraschino cherries, halved and drained
1 can (14 oz) sweetened condensed milk
1/2 cup unsalted butter, softened
1 teaspoon vanilla extract
6 cups powdered sugar
16 oz melting chocolate or chocolate almond bark
Instructions
1. In a large bowl, combine shredded coconut, chopped pecans, halved maraschino cherries, condensed milk, butter, and vanilla. Mix until fully combined.
2. Gradually add powdered sugar, mixing until the filling is thick and moldable.
3. Roll into tablespoon-sized balls and place on a parchment-lined baking sheet.
4. Chill in the refrigerator for at least 2 hours, or freeze for 30–45 minutes until firm.
5. Melt chocolate using a double boiler or microwave in short bursts, stirring until smooth.
6. Dip each chilled ball into melted chocolate, coating fully. Let excess chocolate drip off.
7. Place dipped candies back onto parchment and allow to set until chocolate hardens.
