Ingredients
1 cup unsalted butter, at room temperature
4 cups powdered sugar
2 tablespoons heavy cream
1 teaspoon peppermint extract
1 pinch salt
food coloring, optional
Instructions
1. Place the room temperature butter in a mixing bowl. Beat with a mixer on medium speed for 2–3 minutes until smooth and pale.
2. Gradually add the powdered sugar, about 1/2 cup at a time, mixing on low speed until incorporated. Scrape down the sides of the bowl as needed.
3. Add heavy cream, peppermint extract, and salt. Mix until the dough is thick and smooth. Divide and color with food coloring if desired.
4. Roll the dough into thin ropes on a powdered sugar-dusted surface. Cut into small bite-sized pieces.
5. Place mints on a parchment-lined baking sheet and let them air dry at room temperature for at least 12 hours or overnight.
Notes
Use high-fat European-style butter for a creamier texture.
Let the mints dry fully for the best outer shell with a soft center.
Add coloring gradually to maintain a pastel tone—just a drop or two is enough.
