Description

These Oatmeal Raisin Cookie Bars are soft, chewy, and packed with warm spices, oats, and sweet raisins. Topped with an optional vanilla glaze, they make the perfect snack or dessert for any occasion.

1 1/2 cups old-fashioned rolled oats

1 cup all-purpose flour

1/2 cup brown sugar

1/4 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking soda

1/4 teaspoon salt

3/4 cup raisins

(Optional glaze) 1/2 cup powdered sugar, 1-2 tablespoons milk, 1/4 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment and grease lightly.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
  3. Add eggs one at a time, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, cinnamon, baking soda, and salt.
  5. Gradually mix dry ingredients into wet until combined.
  6. Fold in oats and raisins.
  7. Spread batter evenly in prepared pan.
  8. Bake 25-30 minutes, until golden and a toothpick inserted comes out clean.
  9. Cool completely. For glaze, whisk powdered sugar with milk and vanilla, then drizzle over bars.
