Description

Soft, chewy Oatmeal Raisin Cookie Bars packed with hearty oats, warm cinnamon, sweet raisins, and finished with an optional vanilla glaze. Perfect for snacks, dessert, or lunchbox treats!


Ingredients

1 ½ cups old-fashioned rolled oats

1 cup all-purpose flour

¾ cup brown sugar

¼ cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon cinnamon

½ teaspoon baking soda

½ teaspoon salt

1 cup raisins

Optional glaze: 1 cup powdered sugar, 1–2 tablespoons milk, ½ teaspoon vanilla extract


Instructions

1. Preheat oven to 350°F (175°C). Line or grease a baking pan.

2. Beat butter, brown sugar, and granulated sugar until light and fluffy.

3. Mix in eggs, one at a time, and vanilla extract.

4. In another bowl, whisk flour, oats, cinnamon, baking soda, and salt.

5. Gradually combine dry ingredients with wet mixture.

6. Fold in raisins.

7. Spread batter evenly in pan and bake 25–30 minutes until edges are golden.

8. Cool completely before adding optional glaze. Cut into bars.


Notes

For chewier bars, use dark brown sugar and slightly underbake.

Add chopped walnuts or pecans for extra crunch.

Let bars cool fully before glazing to avoid melting the drizzle.
