Ingredients
1 cup crushed graham crackers
½ cup finely chopped pecans (plus more for topping)
4 tablespoons melted butter
16 oz cream cheese, softened
⅔ cup powdered sugar
1½ teaspoons vanilla extract
¾ cup heavy whipping cream
¾ cup semi-sweet chocolate chips
¾ cup heavy cream (for ganache)
½ cup caramel sauce
Instructions
1. Combine crushed graham crackers, chopped pecans, and melted butter. Press into mini cheesecake molds or lined muffin tins. Chill.
2. Beat cream cheese until smooth. Add powdered sugar and vanilla, mixing until combined.
3. Whip heavy cream to stiff peaks and fold into the cream cheese mixture.
4. Fill molds with cheesecake mixture and smooth tops. Chill at least 4 hours.
5. Make ganache by heating heavy cream and pouring over chocolate chips. Stir until smooth.
6. Pour ganache over set cheesecakes, then drizzle with caramel sauce.
7. Top with toasted chopped pecans and chill until ready to serve.
Notes
For the best texture, chill overnight before serving.
Use silicone molds for easy release.
Toast the pecans briefly in a skillet for extra flavor.
