Ingredients

1 cup graham cracker crumbs

4 tablespoons melted butter

16 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

Fresh berries (raspberries, strawberries, blueberries)

Mint leaves (optional)

Powdered sugar (for dusting)


Instructions

  1. Mix graham cracker crumbs with melted butter until combined.
  2. Press mixture into the bottom of muffin liners in a tin. Chill while preparing filling.
  3. Beat cream cheese with powdered sugar and vanilla until smooth.
  4. In a separate bowl, whip the heavy cream until stiff peaks form.
  5. Fold the whipped cream into the cream cheese mixture gently.
  6. Spoon or pipe filling over crusts. Smooth the tops.
  7. Refrigerate for at least 4 hours or overnight.
  8. Top with fresh berries, mint leaves, and dust with powdered sugar before serving.
