Ingredients
1 cup rolled oats
1/2 cup almond butter or cashew butter
1/4 cup maple syrup
1/4 cup vanilla or plain protein powder
1 tablespoon lemon zest
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/2 cup fresh or freeze-dried blueberries
1 tablespoon chia seeds (optional)
Instructions
1. In a large bowl, combine rolled oats, protein powder, chia seeds (if using), and lemon zest. Mix until well combined.
2. Add almond butter, maple syrup, lemon juice, and vanilla extract. Stir to form a thick dough. Add a splash of water or oats if needed to adjust texture.
