Ingredients
1½ pounds baby Yukon Gold potatoes
2 tablespoons whole grain mustard
1 tablespoon Dijon mustard
3 tablespoons unsalted butter, melted
1 teaspoon garlic powder
1 teaspoon paprika
¾ teaspoon salt
½ teaspoon black pepper
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Place baby Yukon Gold potatoes in a pot of salted water. Bring to a boil and cook until just fork-tender, about 10–12 minutes. Drain and cool slightly.
2. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
3. Gently smash each potato using a glass or potato masher, keeping them intact.
4. In a bowl, whisk together melted butter, whole grain mustard, Dijon mustard, garlic powder, paprika, salt, and pepper.
5. Brush the mustard butter glaze generously over each smashed potato.
6. Roast potatoes for 25–30 minutes, flipping halfway, until golden, crispy, and caramelized.
7. Garnish with chopped parsley if using. Serve immediately while hot.
