Ingredients
2 cups king oyster mushrooms, sliced
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 tablespoon soy sauce or tamari
2 cloves garlic, minced
8 small corn tortillas
1 small white onion, chopped
1/2 cup fresh cilantro, chopped
1 lime, cut into wedges
Instructions
1. Trim and slice the king oyster mushrooms lengthwise into thin strips.
2. In a bowl, mix mushrooms with olive oil, smoked paprika, cumin, soy sauce (or tamari), and garlic. Let marinate for 10 minutes.
3. Heat a skillet or griddle over medium-high heat. Add mushrooms in a single layer and sear for 2-3 minutes. Toss and cook another 4-5 minutes until edges are crisp.
4. While mushrooms cook, warm tortillas over a flame or in a skillet until pliable and lightly charred.
5. Assemble tacos by adding mushrooms to tortillas. Top with onion, cilantro, and a squeeze of lime. Serve immediately.
Notes
For the best texture, do not overcrowd the pan—cook mushrooms in batches if necessary.
Let the mushrooms sit untouched when first searing to get a nice char.
