Ingredients
14 ounces extra-firm tofu, pressed and cubed
3 tablespoons cornstarch
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons neutral oil
3 tablespoons soy sauce
2 tablespoons maple syrup
1 tablespoon rice vinegar
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 teaspoon sesame oil
1 tablespoon sriracha
3 cups cooked white rice
1 cup shelled edamame
2 green onions, thinly sliced
1 tablespoon sesame seeds
Instructions
1. Press the tofu for 20 to 30 minutes, then cut it into bite-sized cubes.
2. Toss the tofu with cornstarch, salt, and black pepper until evenly coated.
3. Heat the neutral oil in a large skillet over medium-high heat.
4. Add the tofu in a single layer and cook for 8 to 10 minutes, turning carefully, until golden and crispy on all sides.
5. In a small bowl, whisk together the soy sauce, maple syrup, rice vinegar, garlic, ginger, sesame oil, and sriracha.
6. Pour the sauce into the skillet and cook for 1 to 2 minutes, stirring gently, until the tofu is glossy and coated.

Notes
