Ingredients
4 tablespoons melted butter
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
1 can (15 oz) sliced peaches, chopped
1 teaspoon ground cinnamon
2 tablespoons sugar (for topping)
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin.
2. Spoon a small amount of melted butter into the bottom of each muffin cup.
3. In a bowl, whisk together flour, sugar, baking powder, salt, and milk until smooth.
4. Pour batter over the butter into each cup, filling about 2/3 full.
5. Top each with a spoonful of chopped peaches.
6. Mix cinnamon and 2 tablespoons of sugar and sprinkle over the top.
7. Bake for 20–25 minutes until golden and a toothpick comes out clean.
8. Let cool for 5 minutes in the pan, then gently lift out and serve warm.
Notes
Use fresh peaches when in season: just peel, slice, and lightly cook them with sugar and lemon juice.
Don’t overfill the muffin cups—leave room for the batter to rise.
Serve warm for best flavor, with vanilla ice cream or whipped cream.
