Ingredients
1 lb ground beef
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
4 hoagie rolls
1 medium onion, diced
1 medium tomato, diced
2 tablespoons fresh cilantro, chopped
1 jalapeño, sliced (optional)
4 tablespoons mayonnaise
2 tablespoons taco seasoning
Instructions
1. Heat a skillet over medium-high heat. Add a small amount of oil and sauté the diced onion until soft and translucent.
2. Add the ground beef to the pan and break it up as it browns. Once cooked through, sprinkle in taco seasoning and stir to combine.
3. Reduce heat to low. Sprinkle the cheddar and Monterey Jack cheese over the beef. Cover the skillet until the cheese is melted.
4. Meanwhile, slice the hoagie rolls and toast them in a hot skillet or under the broiler until golden. Spread mayonnaise on each half.
5. Spoon the cheesy beef mixture onto the bottom half of each roll. Top with diced tomato, chopped cilantro, and sliced jalapeño if desired.
6. Close the sandwich with the top half of the roll. Slice in half and serve hot.
Notes
For extra crispy rolls, brush the cut sides with butter before toasting.
If using lean ground beef, consider adding a splash of oil for richness.
For a milder version, skip the jalapeños and add sliced avocado instead.
