Description

This Mediterranean Ground Beef Stir-Fry is a quick, colorful, and deeply flavorful skillet meal made with ground beef, zucchini, red bell pepper, kalamata olives, and feta cheese. Infused with olive oil, garlic, and oregano, it’s the perfect dinner for busy nights that still delivers big on taste and nutrition. Serve it over grains, wrap it in pita, or keep it low-carb with greens or cauliflower rice.


Ingredients

1 pound ground beef (85–90% lean)

1 medium zucchini, sliced

1 red bell pepper, chopped

1 small red onion, chopped

2 cloves garlic, minced

1/2 cup kalamata olives, pitted

1/3 cup crumbled feta cheese

2 tablespoons chopped fresh parsley

2 tablespoons olive oil

1/2 teaspoon dried oregano

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper


Instructions

1. Slice the zucchini and red bell pepper, chop the onion, mince the garlic, and chop the parsley. Set feta and olives aside.

2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned and crumbled. Season with salt, pepper, and oregano. Remove from skillet and set aside.

3. In the same skillet, add remaining olive oil. Sauté red onion and garlic for 1–2 minutes until fragrant. Add zucchini and red bell pepper. Cook 5–6 minutes until veggies are just tender.

4. Return cooked ground beef to the skillet. Add kalamata olives and stir to combine. Cook for 2–3 more minutes to meld flavors.

5. Turn off heat. Sprinkle with crumbled feta and fresh parsley. Drizzle with a bit more olive oil if desired. Serve hot.


Notes

Let the vegetables remain slightly firm for best texture and freshness.

Add chickpeas or white beans to stretch this meal and add more protein.

For extra flavor, use marinated feta or a splash of lemon juice before serving.
