This Meal Prep Ground Beef Teriyaki is a sweet-savory bowl of comfort, made with juicy beef, crisp veggies, and a glossy teriyaki glaze over fluffy white rice. It’s easy to make, reheats beautifully, and is ideal for weekly meal prep.
Ingredients
1 pound ground beef
2 cups broccoli florets
1 cup julienned carrots
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/4 cup low sodium soy sauce
2 tablespoons brown sugar
1 tablespoon cornstarch
2 tablespoons water
3 cups cooked white rice
1 tablespoon sesame seeds (optional)
2 green onions, chopped (optional)
Instructions
1. In a large skillet over medium heat, add a small amount of oil. Sauté garlic and ginger for 1 minute until fragrant.
2. Add the ground beef. Break it apart with a spoon and cook until browned. Drain excess fat if needed.
3. Stir in broccoli and carrots. Cook for 5 minutes until vegetables begin to soften.
4. In a small bowl, mix soy sauce, brown sugar, cornstarch, and water. Whisk until smooth.
5. Pour the sauce into the skillet. Stir everything together and simmer for 2–3 minutes until the sauce thickens and coats the beef and veggies.
6. Serve over white rice. Garnish with sesame seeds and green onions if desired.
7. Store leftovers in airtight containers for up to 4 days in the fridge.
Notes
Don’t overcook the vegetables – a bit of crunch keeps the texture fresh and satisfying.
For a richer sauce, add a splash of sesame oil just before serving.
To keep rice from getting mushy during reheating, store it separately if freezing.
