Description

Marry Me Chicken Pasta is a creamy, savory pasta dish made with juicy chicken breasts, sun-dried tomatoes, and a velvety Parmesan cream sauce tossed with penne pasta. It’s a comfort meal with restaurant-quality flavor, perfect for date nights or cozy evenings at home.


Ingredients

1 pound penne pasta

2 large boneless skinless chicken breasts

2 tablespoons olive oil

1 tablespoon butter

3 cloves garlic minced

1 small shallot finely chopped

1 cup sun-dried tomatoes chopped

1 cup heavy cream

1 cup chicken broth

1 cup Parmesan cheese grated

1 teaspoon crushed red pepper flakes

1 teaspoon salt

1⁄2 teaspoon black pepper

2 tablespoons chopped fresh basil or parsley


Instructions

1. Season chicken breasts with salt, pepper, and garlic powder.

2. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken on both sides until golden brown and cooked through. Remove from skillet and let rest.

3. In the same skillet, add garlic and shallots. Sauté until fragrant and translucent.

4. Pour in chicken broth and bring to a simmer, scraping up any browned bits.

5. Stir in heavy cream and Parmesan cheese. Mix until the sauce is smooth and slightly thickened.

6. Add sun-dried tomatoes and crushed red pepper flakes. Let simmer for 2–3 minutes.

7. Meanwhile, cook penne pasta in salted water until al dente. Drain, reserving 1⁄4 cup of pasta water.

8. Slice cooked chicken and add back into the sauce. Add the cooked pasta and toss everything together.

9. If needed, add reserved pasta water to loosen the sauce.

10. Garnish with chopped basil or parsley and additional Parmesan before serving.


Notes

For extra creaminess, stir in a tablespoon of cream cheese with the heavy cream.

Let the chicken rest after searing to keep it juicy when slicing.

Don’t skip the sun-dried tomatoes—they add depth and a tangy contrast to the rich sauce.
