Ingredients
2 cups cooked shredded chicken
1 pound potato gnocchi
1 cup sun-dried tomatoes, chopped
2 cups fresh spinach
1 small onion, finely diced
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 cup grated parmesan cheese
1 tablespoon Italian seasoning
1/4 teaspoon red pepper flakes
Salt and black pepper, to taste
1 tablespoon olive oil or butter (for sautéing)
Instructions
1. Heat olive oil or butter in a large pot over medium heat. Add onions and garlic; sauté until soft and fragrant, about 3-4 minutes.
2. Add chicken broth, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Bring to a gentle simmer for 5-7 minutes.
3. Add shredded chicken and gnocchi to the pot. Simmer for 4-5 minutes until gnocchi is tender.
4. Stir in heavy cream and parmesan cheese. Let it cook for another 3-4 minutes until the soup thickens slightly. Season with salt and pepper to taste.
5. Add spinach and stir until just wilted.

Use rotisserie chicken for a quick prep shortcut without sacrificing flavor.
If the soup thickens after storing, add a splash of chicken broth or water when reheating.
