2 boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

3 tablespoons unsalted butter

4 cloves garlic, minced

Juice of 1 large lemon

1 teaspoon lemon zest

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

2 tablespoons fresh parsley, chopped

1/4 cup grated parmesan cheese (for garnish)

For the Parmesan Linguine:

8 ounces linguine pasta

2 tablespoons unsalted butter

2 cloves garlic, minced

1 cup heavy cream

3/4 cup grated parmesan cheese

Salt and black pepper to taste

2 tablespoons fresh parsley, chopped


Instructions

  1. Prepare the Chicken Bites
    • Pat the chicken pieces dry and season with salt, black pepper, dried oregano, and red pepper flakes (if using).
    • Heat olive oil in a skillet over medium-high heat. Add the chicken pieces and cook for 3-4 minutes per side until golden and cooked through. Remove and set aside.
  2. Make the Garlic Butter Sauce
    • In the same skillet, reduce heat to medium and add butter. Stir in minced garlic and cook for 30 seconds.
    • Add lemon juice and zest, stirring well. Return the cooked chicken to the pan and coat in the sauce. Sprinkle with fresh parsley.
  3. Cook the Linguine
    • Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions until al dente. Drain, reserving 1/2 cup of pasta water.
  4. Make the Parmesan Sauce
    • In a separate pan, melt butter over medium heat. Sauté minced garlic for 30 seconds.
    • Add heavy cream and bring to a gentle simmer. Stir in grated parmesan cheese until smooth.
    • Season with salt and black pepper. If the sauce is too thick, add some reserved pasta water.
  5. Combine Everything
    • Toss cooked linguine in the parmesan sauce until evenly coated.
    • Plate the pasta and top with the lemon garlic butter chicken bites. Garnish with extra parmesan cheese and parsley. Serve warm and enjoy!
