Ingredients
2 large chicken breasts, boneless and skinless
2 tablespoons Cajun seasoning
1 tablespoon lemon juice, fresh
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon butter
1 teaspoon Italian herbs (basil, oregano, parsley blend)
1 cup heavy cream
1 cup Parmesan cheese, freshly grated
8 ounces rotini pasta
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (optional)
Instructions
1. Cut the chicken into bite-sized chunks. Toss with olive oil, Cajun seasoning, lemon juice, salt, and pepper.
2. In a large skillet over medium-high heat, sear chicken for 4–6 minutes per side until golden and cooked through. Remove and set aside.
3. In a large pot, boil salted water and cook the rotini pasta according to package instructions. Drain and reserve 1/2 cup pasta water.
4. In the same skillet, reduce heat to medium. Melt butter and sauté minced garlic for 1 minute until fragrant. Add Italian herbs.
5. Pour in heavy cream, stir, and simmer for 3–4 minutes until slightly thickened.
6. Stir in Parmesan until smooth and creamy.
7. Add cooked rotini and a splash of reserved pasta water if needed to loosen the sauce.
8. Return the chicken to the skillet and gently toss everything to combine.
9. Serve immediately, topped with fresh parsley and more Parmesan if desired.
Notes
For extra flavor, marinate the chicken in the Cajun seasoning and lemon juice for 30 minutes before cooking.
To lighten it up, use half-and-half instead of heavy cream—just note the sauce will be thinner.
Freshly grated Parmesan melts more smoothly than pre-shredded.
