Keto Crispy Reuben Roll-Ups are the perfect low-carb twist on the classic sandwich. Ingredients
1 ½ cups shredded Swiss cheese
6 oz sliced corned beef
½ cup sauerkraut, well-drained
¼ cup Russian or Thousand Island dressing (for serving)
1 tbsp chopped parsley (optional)
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Place 1/3 cup shredded Swiss cheese into piles on the parchment and spread into 5–6 inch circles.
3. Bake cheese circles for 5–7 minutes, until bubbly and golden around the edges.
4. Remove from oven and let rest for 30–45 seconds.
5. Layer with sliced corned beef and 1 tbsp sauerkraut.
6. Use a spatula to roll each circle into a tight log.
7. Return roll-ups to oven for 2–3 minutes to seal and crisp more.
8. Optional: broil for 30 seconds if you like extra crunch.
9. Sprinkle with parsley and serve with dressing on the side.
Notes
Squeeze your sauerkraut thoroughly to prevent soggy roll-ups.
Freshly shredded cheese gives the crispiest, cleanest melt.
Roll them while warm but not too hot or the cheese will tear.
