Ingredients
1 gallon water
1 cup kosher salt
1/2 cup brown sugar
1 tablespoon whole peppercorns
1 onion, sliced
4 cloves garlic, smashed
1 orange, sliced
1 lemon, sliced
4 sprigs fresh thyme
2 sprigs fresh rosemary
3 fresh sage leaves
4 cups ice
Instructions
1. In a large stockpot, combine water, kosher salt, and brown sugar. Heat over medium heat until salt and sugar dissolve completely.
2. Add garlic, onion, peppercorns, citrus slices, and herbs. Simmer for 5 minutes to release flavor.
3. Remove from heat and add ice to cool the brine completely.
4. Place the turkey in a large brining bag or food-safe container. Pour the cooled brine over it, making sure the turkey is fully submerged.
5. Refrigerate and brine for at least 12 hours or up to 24 hours.
6. Remove turkey from brine, rinse thoroughly, and pat dry.
7. Allow the turkey to air-dry uncovered in the fridge for 1 to 2 hours before roasting.
Notes
