Ingredients
1 lb Italian sausage
12 oz bow tie pasta (farfalle)
1 can (14.5 oz) diced tomatoes
2 tablespoons tomato paste
1 small onion, chopped
3 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup grated Parmesan cheese
1/2 cup reserved pasta water (optional)
Instructions
1. In a large skillet over medium heat, add olive oil and cook the Italian sausage, breaking it up until fully browned. Remove and set aside.
2. In the same skillet, add more olive oil if needed. Sauté chopped onions and minced garlic until fragrant and translucent.
3. Stir in diced tomatoes and tomato paste. Season with salt and pepper. Simmer for 10 minutes to thicken and develop flavor.
4. Meanwhile, boil the bow tie pasta until al dente. Reserve 1/2 cup of pasta water before draining.
5. Return sausage to the skillet. Add cooked pasta and a splash of pasta water. Toss everything together to coat evenly.
6. Sprinkle in chopped parsley and grated Parmesan. Serve hot with extra cheese if desired.

Use spicy sausage for heat or mild for a family-friendly version.
Add vegetables like spinach, zucchini, or bell peppers for more texture and nutrients.
