Ingredients
3 large lemons (zest and juice)
1 cup granulated sugar
1/2 cup unsalted butter, cut into pieces
3 large eggs 1 pinch salt
Instructions
1. Wash the lemons thoroughly and zest them carefully, avoiding the white pith. Juice the lemons and strain out seeds.
2. In a heatproof bowl, whisk together the sugar, eggs, lemon juice, zest, and salt until fully combined.
3. Place the bowl over a pot of simmering water (double boiler) and stir continuously, scraping the sides, until the mixture thickens and coats the back of a spoon.
4. Remove from heat and stir in butter pieces one at a time, letting each melt fully before adding the next, until the spread is glossy and smooth.
5. Pour the lemon spread into sterilized jars, let cool to room temperature, then refrigerate. It will set further as it chills.
Notes
Use Meyer lemons for a sweeter floral note. For dairy-free, swap butter with coconut oil. Store in the fridge up to 2 weeks or freeze for 3 months.
