Ingredients

1 cup creamy peanut butter

1/4 cup unsalted butter, softened

1 3/4 cups powdered sugar

1 teaspoon vanilla extract

Pinch of salt

2 cups dark chocolate, chopped or in chips

Chopped peanuts (optional, for topping)


Instructions

  1. In a bowl, beat together peanut butter and butter until smooth.
  2. Gradually mix in powdered sugar, stirring after each addition.
  3. Add vanilla extract and salt; mix until thick and sticky.
  4. Roll into 1-inch balls and place on parchment-lined baking sheet.
  5. Freeze for 20-30 minutes until firm.
  6. Melt dark chocolate in a double boiler or microwave in short bursts.
  7. Dip each peanut butter ball in melted chocolate and place back on sheet.
  8. Sprinkle with chopped peanuts if desired.
