Ingredients
4 cups shredded russet potatoes or frozen hash browns
3 cups thinly sliced cabbage
1½ cups grated Irish cheddar cheese
3 tablespoons butter
1 small onion, diced
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon pepper
2 tablespoons chopped green onions (optional, for garnish)
Instructions
1. Peel and shred potatoes or thaw hash browns. Chop cabbage, dice onion, mince garlic, and grate cheese.
2. In a large oven-safe skillet, melt butter over medium heat. Sauté onion for 3–4 minutes until soft. Add garlic, cook 1 minute. Stir in cabbage, cook 5–7 minutes until tender.
3. Add potatoes, season with salt and pepper, mix gently. Press into an even layer.
4. Cook on medium heat 10–12 minutes until bottom is crisp. Sprinkle cheese on top. Broil or bake 5–7 minutes until melted and golden.
5. Rest 2 minutes, garnish with green onions, slice, and serve hot.
Notes
Squeeze excess moisture from fresh potatoes for crispiness.
Use sharp white cheddar if Irish cheddar isn’t available.
