Description
Humpty Dumpty Dip is a creamy, deviled-egg-inspired appetizer that’s quick to make and guaranteed to impress. With mashed yolks, tangy mustard, and a sprinkle of paprika, this chilled dip is perfect for game day or any gathering where finger food rules.
Ingredients
6 large hard-boiled eggs
½ cup mayonnaise
1 tablespoon Dijon mustard
2 teaspoons white vinegar or pickle juice
¼ teaspoon salt
¼ teaspoon black pepper
⅛ teaspoon cayenne pepper or a few dashes of hot sauce (optional)
1 teaspoon paprika (for garnish)
2 tablespoons fresh chives, finely chopped
Instructions
1. Boil and peel the eggs. Place eggs in cold water, bring to a boil, cover, then remove from heat and let sit for 10–12 minutes. Transfer to an ice bath and peel.
2. Slice the eggs in half and separate yolks. Place yolks in a bowl and mash until smooth.
3. Stir in mayonnaise, Dijon mustard, and vinegar or pickle juice. Mix until creamy.
4. Finely chop the egg whites and fold them into the yolk mixture.
5. Season with salt, black pepper, and cayenne or hot sauce if using. Adjust to taste.
6. Spoon into a serving bowl, garnish with paprika and chives, and chill for 30 minutes before serving.
Notes
Make sure the egg whites are patted dry before mixing to avoid a watery dip.
For smoother texture, blend yolk mixture in a food processor.
Want extra flavor? Add a pinch of garlic powder or a spoonful of sweet relish.
