Ingredients
2 chicken breasts, cut into bite-sized pieces
3 tablespoons hot honey
2 tablespoons balsamic vinegar
8 oz fettuccine or linguine pasta
1 cup heavy cream
2 tablespoons butter
3 cloves garlic, minced
1 cup freshly grated Parmesan cheese
1/2 cup crumbled feta cheese
2 tablespoons Greek yogurt or cream cheese
1 tablespoon olive oil (for whipping feta)
1/2 lb Brussels sprouts, halved
2 tablespoons olive oil (for roasting)
1/2 teaspoon chili flakes
Salt and black pepper to taste
1 tablespoon chopped fresh parsley (for garnish)
Instructions
1. Cut the chicken into small pieces. Season with salt, pepper, and chili flakes.
2. In a skillet with olive oil, sear chicken until golden and fully cooked. Remove and set aside.
3. In the same skillet, add hot honey and balsamic vinegar. Simmer until thickened into a glaze. Return chicken and coat well.
4. Cook pasta in salted boiling water until al dente. Reserve 1/4 cup of pasta water, then drain.
5. In a blender or food processor, blend feta, Greek yogurt or cream cheese, olive oil, and black pepper until smooth. Set aside.
6. Toss Brussels sprouts with olive oil, salt, and pepper. Roast at 425°F for 20–25 minutes until crisp.
7. In a saucepan, melt butter and sauté garlic. Add heavy cream, bring to a simmer, then stir in Parmesan until smooth and creamy. Toss in cooked pasta. Use pasta water to loosen if needed.
8. To serve, plate Alfredo pasta, top with glazed chicken, add whipped feta on the side, Brussels chips, and garnish with parsley.
Notes
For maximum crispiness, spread Brussels sprouts flat on the baking sheet and avoid overcrowding.
Whip the feta just before serving for the smoothest texture.
Don’t skip reserving pasta water—it helps bind and adjust the Alfredo sauce perfectly.
