Description

A refreshing and crunchy salad that pairs Honeycrisp apples with fresh broccoli florets, dried cranberries, and roasted nuts, all tossed in a creamy, tangy-sweet dressing. Perfect for a picnic, holiday side, or weekday lunch.

Ingredients

Broccoli florets (chopped)

Honeycrisp apples (diced, unpeeled)

Dried cranberries

Chopped roasted nuts (almonds, pecans, or walnuts)

Mayonnaise

Apple cider vinegar

Honey or maple syrup

Lemon juice (optional, for apples)

Instructions

  1. Wash and chop broccoli into small bite-sized florets. Optionally dice the stems.
  2. Core and dice Honeycrisp apples into chunks or thin slices. Toss with lemon juice to prevent browning.
  3. In a small bowl, whisk together mayonnaise, apple cider vinegar, and honey or maple syrup to make the dressing.
  4. In a large mixing bowl, combine broccoli, apples, cranberries, and nuts.
  5. Pour dressing over the salad and gently mix until evenly coated.
  6. Chill in the fridge for at least 30 minutes before serving.
  7. Optional: Top with additional nuts or cranberries before serving.
