Description

Ingredients

2 pounds carrots, peeled and sliced

2 tablespoons honey

2 tablespoons olive oil

1 tablespoon fresh thyme, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Peel and slice carrots into even 1/2-inch thick pieces.

3. In a bowl, whisk together honey, olive oil, thyme, salt, and pepper.

4. Toss the sliced carrots in the honey mixture until evenly coated.

5. Spread the carrots in a single layer on the prepared baking sheet.

6. Roast for 25–30 minutes, flipping halfway through, until tender and caramelized.

7. Remove from the oven and garnish with additional thyme if desired. Serve warm.


Notes

For deeper flavor, try substituting maple syrup for honey.
